  • Raspberry-Ricotta Parfaits

    Ricotta cheese can help quell your hunger pangs.  That’s because the omega 3 fatty acids found in the cheese have been proven to elevate levels of the appetite-suppressing hormone leptin.

    Ingredients:

    • 1 package (6 oz.) fresh raspberries
    • 1 box (3 oz.) raspberry gelatin
    • 1 cup part-skim ricotta cheese
    • 1/4 teaspoon pure almond extract
    • 3 tablespoons confectioner’s sugar
    • 1/2 cup fresh blueberries

    Directions:

    In food processor, puree raspberries 30 seconds; transfer to 4-cup liquid measure.  Add enough boiling water to equal 2 1/2 cups.  Add raspberry gelatin, stirring until gelatin is dissolved.  Let sit 1 hour, or until mixture begins to thicken.  In bowl, blend next three ingredients.  Layer gelatin and ricotta mixtures in 4 glasses.  Top with blueberries.  Garnish with fresh currants, if desired.  Chill.
