Mixed Berry Crisp

For this recipe you will need:

• 3/4 cup sugar, divided
• 2 tablespoons cornstarch
• 1 lemon, zested
• 6 cups mixed berries like blueberries, blackberries and raspberries
• 1/2 cup all-purpose flour
• 1/2 ground cinnamon
• 6 tablespoons cold butter, cut into 1/2″ cubes

Directions:

1. Heat oven to 400°F.  In  bowl, combine 1/4 cup sugar, cornstarch and 2 teaspoons grated lemon zest.  Add berries; toss to coat evenly.  Divide mixture evenly among six ramekins set in jelly roll pan or in an 8×4 baking dish.
2. In bowl, combine remaining sugar, flour and cinnamon.  Using fork, blend butter into sugar mixture until coarse crumbs form.
3. Sprinkle mixture evenly over berry mix.  Bake 15 minutes or until fruit is bubbly and crumbs are golden.

Twin Showers

A month and a half before my daughter gave birth to her twins, we held a baby shower. We had twin showers in fact. I was the one who sent out the baby shower invitations to all our friends and relatives. Everyone gave two gifts. It was fun and my daughter opened all the presents. Everyone did not leave without getting anything. We prepared several souvenirs which we handed out to all the guests.

Viewing Pleasure

We all love to watch television. It’s the only time we get to relax and sometimes watch a movie together. My husband regularly checks the TV DLP Lamps to make sure all the televisions are working right. He hates it when the picture goes dim while watching his favorite program or movie. This happened once before and he thought that the TV was broken. a TV repairman simply changed the bulb. My husband now regularly checks all the lamps. The repairman also gave him a list of TV Parts that usually conk out. He listed the symptoms for every part as well. We always thought that once something goes wrong with the TV, you cannot repair it.

My husband also makes sure that all the remote controls are working. He doesn’t use a universal one. These remotes really get abused. My kids sometimes drop them. The buttons don’t work or the battery contact get loose. They too get misplaced so my husband bought a small tray for them. He also keeps a box of batteries. These are the first ones to go. He hates it whenever he pushes a button and it doesn’t respond. Because of his preventive efforts, we always have a great time watching TV.

Quickie Renovation

My husband and I are almost done with the condominium unit right beside ours and we are now on the finishing touches.  We had to fix it because my daughter who recently gave birth to twin girls will be staying with us for a while.  She gave birth through C-section and she is still recovering from the surgery.  It’s difficult for her to take care of two babies especially that she is alone most of the time.  Her husband is back to work after taking a leave.  It’s only been three weeks after the surgery and she still can’t move fast.  She wanted to stay with us so I can help her take care of her babies.

Tomorrow, we’re off to the home depot to look for discount lighting fixtures.  I’ve seen in the newspaper ad that they are having a big sale for home lighting fixtures.  This is great timing because the one in our hallway needs to be replaced as well.  I would also like to check if they now have the ceiling fan lights I need for the kitchen dining table’s ceiling fan.  Last time I was there the lights were out of stock.  The ceiling fan is running with only one light left.  If it goes, then I will have to use just the pin lights.

Hopefully, we get everything we need tomorrow.  I want this renovation job done with quickly.  I can’t wait for them to move here with us.
