  • Jalapeno Corn Muffins

    These muffins are easy to make and the ingredients may already be in your pantry.  Let’s start baking!  :)

    For the muffins, you will need:

    • 1 box (8.5 oz.) corn muffin mix
    • 1 cup (4 oz.) shredded Cheddar cheese
    • 1/4 cup chopped pickled jalapeños
    • 1 tsp. Mexican seasoning, like Spice Hunter

    Procedure:

    1)  Heat oven to 400°F.  Line 6-cup muffin pan with paper liners.

    2)  Prepare muffin mix according to package directions, stirring in cheese, peppers, pickled jalapeños and Mexican seasoning.

    3)  Divide mixture evenly among lined muffin cups.  Bake 20 minutes, or until golden brown.

      Jelepino in muffins??? Wow, I love hot food but never thought of it as a muffin!
