  • Recipe Trader Sunday – Frozen Banana Delight

    This one is so easy to make, even your kids can do this.  I’m sorry about the photo, the camera was low on batteries at that time so I used my cell phone instead.

    For this recipe, you will need:

    • 10 to 12 pieces bananas
    • 1 can condensed milk
    • 2 250 ml packages all purpose cream
    • chopped nuts

    1)  Wash and peel bananas.

    2)  Arrange them on a pyrex dish.

    3)  In a bowl, mix together condensed milk and all purpose cream.  I would advise to pour the milk gradually to control the sweetness.

    4)  Pour the mixture on top of the bananas.  Sprinkle with chopped nuts, then cover with cling wrap.

    5)  Freeze for at least 2 hours then serve.

    How To Make Glazed Walnuts

    Here’s the recipe for the Glazed Walnuts that Grampy requested.

    For this recipe, you will need:

    • 2 cups walnut halves
    • 3/4 cup white sugar
    • 1/4 cup water

    1)  Lightly grease a baking sheet.

    2)  In a large glass bowl, combine walnut halves, sugar, and water. Cook in microwave oven on high setting for 8 to 8 1/2 minutes, or until sugar has caramelized. Stir several times during cooking.

    3)  Pour out onto prepared baking sheet, separating into pieces. Let cool completely. Store in an airtight container.

    4)  Top glazed walnuts over salads, desserts or enjoy them as they are.

    Chewy Chocolate Chip Cookies

    I have tried a lot of Chocolate Chip cookie recipes and this is so far one of the best (aside from Mrs. Field’s that I bake for my kids often).  I got the recipe from Alton Brown’s The Chewy Cookies.

    For this recipe, you will need:

    • 2 sticks unsalted butter
    • 2 1/4 cups bread flour
    • 1 teaspoon kosher salt
    • 1 teaspoon baking soda
    • 1/4 cup sugar
    • 1 1/4 cups brown sugar
    • 1 egg
    • 1 egg yolk
    • 2 tablespoons milk
    • 1 1/2 teaspoons vanilla extract
    • 2 cups semisweet chocolate chips

    1)  Heat oven to 375 degrees F.

    2)  Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside.

    3)  Pour the melted butter in the mixer’s work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.

    4)  Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.
